The following topics are propaedeutic to this teaching: adequate knowledge of General Chemistry, Inorganic Chemistry, Organic Chemistry. Physics .
BLENDED. Sono previsti 6 CFU (54 ore) divisi in 44 ore di lezioni in aula + 10 ore di lezioni on line. 2 CFU (18 ore) di esercitazioni numeriche.
BLENDED. The course consists of a total 6 Credits (ECTS), where 44 are of class lectures + 10 hours are available on line. 2 Credits (ECTS) are numerical practicals.
Adeguate conoscenze relative alla struttura e alle relazioni struttura-funzione delle biomolecole e macromolecole biologiche, e conoscenze di base sul funzionamento degli enzimi e sulla energetica biochimica;
Capacità di applicare conoscenza e comprensione delle nozioni acquisite al fine di riconoscere le relazioni tra struttura chimica delle biomolecole e le loro funzioni biochimiche molecolari, incluso il rispettivo ruolo nella catalisi enzimatica, nella trasduzione energetica biochimica, nell’informazione genetica e nel metabolismo, e nelle trasformazioni alimentari dove applicabile .
(i) autonomia di giudizio: capacità di individuare le informazioni biochimiche strutturali necessarie per riconoscere i rapporti struttura-funzione relativi ai processi biochimici che intervengono sia negli organismi che nelle materie prime alimentari, che sono strumentali per migliorare l'efficienza dei processi e la qualità e delle produzioni alimentari; (ii) abilità comunicative: capacità di trasferire in modo chiaro ed esauriente informazioni e idee a interlocutori di vario tipo.
Adequate knowledge and understanding of structure and structure-function relationship of biomolecules and biological macromolecules, basic knowledge of enzyme functioning and of biochemical energetics.
Developing the ability to apply knowledge and comprehension of acquired notions in order to recognize the relationships between the chemical structure of biomolecules and their molecular biochemical functions, including their respective role in enzyme catalysis and kinetics, in the biochemical energetics, in the genetic information and metabolism, and food transformation whenever appropriate.
(a) making judgments: capability to identify the information of biochemical structural character needed to recognize structure-function relationship related to biochemical processes occurring either within organisms or in the raw food materials, instrumental to improve the efficiency of the food processes and of the quality of the final food products;
(b) communication skills: ability to clearly and exhaustively communicating notions, ideas, problems and technical solutions to interlocutors, either professional or not, representative of the various and specific expertise in the agro-food supply chain (engineers, biologists, chemists, nutritionists, administrators).
1. Logica chimico-molecolare degli organismi viventi; relazioni struttura-funzione idrocarburi e gruppi funzionali di interesse biochimico. Acqua: struttura e proprietà di interesse biochimico; Legame Idrogeno; Legame Idrofobico. (0,5 CFU)
2. Lipidi: struttura, classi, relazioni struttura-funzione. Acidi grassi. Fosfolipidi, membrane biologiche. Isoprenoidi, steroidi, eicosanoidi. (0,5 CFU)
3. Carboidrati: struttura, classificazione, relazioni struttura-funzione. Monosaccaridi, Disaccaridi, Polisaccaridi. (1,25 CFU)
4. Amminoacidi: struttura, classificazione, relazioni struttura-funzione. Legame peptidico. Proteine: relazioni struttura-funzione: interazioni proteine-ligandi. (1,25 CFU)
5. Basi, Nucleotidi, Acidi nucleici (DNA, RNA). ATP, ADP, AMP. NAD e NADP. FAD. Relazioni struttura-funzione. ( 0,75CFU)
6. Equilibrio e cinetica nelle reazioni biochimiche. Principi di Bioenergetica; ATP e trasferimento dei gruppi fosforici nelle reazioni biosintetiche e nel trasporto di membrana. NAD, NADP e reazioni di ossido-riduzione biochimiche. (1 CFU)
7. Enzimi: cinetica e catalisi enzimatiche; equazione di Michaelis-Menten; enzimi allosterici; inibizione reversibile ed irreversibile. Regolazione Enzimatica. Coenzimi e cofattori vitaminici. (0,75 CFU)
1.Chemical-molecular logic and composition of living organisms. Structure-function relationships of hydrocarbons and organic functional groups in biomolecules; Water: biochemically relevant structural-functional properties; Hydrogen bond; Hydrophobic bond. (0.5 ECTS)
2. Lipids: structure, classes, properties, structure-function relationships. Fatty acids. Phospholipids; Biological membranes. Isoprenoids, steroids, eicosanoids. (0,5 ECTS).
3. Carbohydrates: structure, classes, structure-function relationships of Monosaccharides, Disaccharides, Polysaccharides. (1,25 ECTS)
4. Amino acids: structure, classes, structure-function relationships. Peptide bond. Protein: structure and functions : protein-ligand interactions. (1,25 ECTS)
5. Bases, Nucleotides and Nucleic acids (DNA; RNAs): structure-function relationships. ATP; NAD and NADP. ( 0,75 ECTS)
6. Equilibrium and kinetics in the control of biochemical reactions. Principles of Bioenergetics. ATP and phosphoryl groups transfer in biosynthetic reactions and membrane transport. NAD and NADP in biological oxidation-reduction reactions. (1 ECTS)
7. Enzyme kinetics and catalysis; Michaelis-Menten equation. Allosteric enzymes. Reversible and irreversible inhibition. Enzyme regulation. Coenzymes and vitamin cofactors. (0,75 ECTS)
Colloquio orale articolato su tre tematiche tra quelle elencate nel programma del corso.
Nel colloquio orale lo studente dovrà dimostrare di essere in grado di discutere e saper utilizzare, con linguaggio appropriato e nell’ottica struttura-funzione.
Attribuzione del voto finale in trentesimi. La votazione minima è 18/30, la massima 30 e lode.
La prova orale sarà superata con esito positivo se lo studente dimostrerà di possedere una complessiva conoscenza delle tematiche, esponendo i contenuti in maniera corretta. La valutazione massima verrà conseguita se lo studente dimostrerà una conoscenza approfondita delle tematiche.
Ad ogni quesito verrà attribuito un punteggio massimo di 10.
Verbal proof based on three questions from the course program.
During the oral discussion the student will have to discuss and demonstrate to be adequately able to exploit the knowledge of a topic in the perspective of structure-function relationships and with proper lexicon.
The final mark is given in thirtieths. Successful completion of the examination will lead to grades ranging from a minimum of 18 to a maximum of 30 cum laude.
The verbal proof will have a positive score when the student show an overall knowledge of the topics, with a competent exposure. Deep knowledge of the topics will lead to the maximum marks. For each question 10 points are assigned.
